
Waffles! Yes, I made chocolate sourdough waffles for this month's edition of Bread Baking Day. The theme was sweet breads, and believe me, it doesn't get much sweeter than this!
I'd ripped out the photo and recipe of these chocolate malt sourdough waffles from the King Arthur catalog I get every month or so...they looked amazing. Not only have I been itching to use the malted milk powder I bought, I love baking with sourdough, bread of course but also other unexpected things. Like the fantastic sourdough chocolate cake I made awhile back...oh, I almost ate the whole thing.
This was similar, but quicker, and I didn't have to feel guilty about having it for breakfast! Overnight your starter is fed, then in the morning you simply mix the batter and pop it in your waffle iron. Takes no more time than a regular recipe, if you can remember to feed your starter the night before.

As for these--they were awesome. Really interesting flavor, not obviously sourdough, just complex. Very light, very chocolatey, with just a background flavor of the malt. Wonderful combination. They are supposed to be a dessert waffle, but I served them for breakfast. After my husband got home, we embellished them a bit with some homemade chocolate ice cream and syrup...which is also a very good way to go!
The one casualty from these guys? My waffle iron. Not the fault of the recipe--for starters, I had a crappy waffle iron. This batter is a bit thin, and it leaked over the sides. I was lazy about cleaning up, so by the next morning I was chiseling dried batter off the sides, which as any of you that have cleaned up dried starter knows, it holds like bloody cement. I was just tired enough, and decided that a $12 dollar wafflemaker was not worth my time. I have been wanting a new one, anyway. So I will also give you that bit of advice--clean up right away!!!

Waffles for breakfast is a great idea :-D And sourdough chocolate waffles with a hint a malt is even better!
I just saw your photo in the BBD roundup, and wow. I'm a chocolate (and vanilla) malt fanatic, in fact, I can eat spoonfuls of malt powder on it's own, and forget about malted milk balls, gone in a second! Your waffles would also be gone a second if I was there when you made them! Beautiful and mouth watering job!
